Fresh Berries

The strawberry, raspberry and blueberry are great berries to incorporate into the menu with availability of different varieties increasing over the next few months.  Strawberries, raspberries and blueberries are readily available and prefect for use in desserts, cakes, fruit flans, muffins, cupcakes, French toast, pancakes, or served fresh with yoghurt and granola, King Island Cream or ice cream. Blackberries (about a month away), mulberries and loganberries are also worth considering for specials and over the festive season (watch for availability) giving venues a good range of berries to consider for use over the warmer summer months.




Fresh local asparagus is now in season and is looking good for the next few months. You can boil, steam or pan fry asparagus, barbecue it, grill it, use it in salads, stir fries, quiches, tarts, in risotto’s and with pasta. Asparagus goes well with egg dishes for the breakfast menu (with hollandaise sauce), is a wonderful vegetable to use in entrees and is an elegant alternative to use with main dishes.  It is also a nice variation to use in a side serve of vegetables. Asparagus comes in bunches and box form.


beetrootBeetroot comes in bulb, large bunches or baby beetroot bunch form. Beetroot can be used in salads, on burgers, in a risotto, in cakes, soups, dips, chutneys, in freshly made pasta and as part of a juice composition (juice bars). The baby beetroot is also a nice finishing garnish. Golden beetroot has a lighter appearance and can be a good alternative for chefs looking for something different (when available in warmer months) to incorporate into a special. You can store beetroot in a cool dark place for up to three days but should refrigerate in the cool room for up to ten days.

Dutch Carrots

Dutch carrots are a good versatile vegetable to use in functions and for seasonal specials.  These mini carrots come in a variety of colours and are available in a bunch of five or a deck of ten. Orange dutch carrots are usually available all year round but tend to shrink in size during the colder months. The purple dutch carrots and yellow dutch carrots are more plentiful during the warmer months when growing conditions prevail. They are great for adding color to a dish and for enhancing presentation.
